Fall colors are everywhere at the Monona Farmers’ Market!
Fall colors are everywhere at the Monona Farmers’ Market, even in cauliflower. You’ll find purple, orange and white cauliflower at Nehmer’s Produce and Greenhouse. For a great side dish try roasting this versatile vegetable, seasonings bring out the delicious flavor.
1 medium-large head, cut into 1/4-inch-thick slices
Extra virgin olive oil, to coat
Coarsely ground black pepper
Preheat oven to 375 degrees. Place cauliflower in a large mixing bowl. Sprinkle olive oil to coat (a couple of tablespoons). Season generously with salt and pepper and toss gently until evenly coated. Lay cauliflower pieces on a baking sheet. Drizzle remaining oil from the bowl on top. Bake, turning once, until caramelized on edges and tender, 25 to 30 minutes.
